The utensil you buy for your charcuterie board is really cheap. It is actually a very simple idea and takes less than five minutes to do. The meat that you are cutting up is almost entirely pre-cooked. That way, you can get a more tender meat for your charcuterie board. The fact that you can also get the same results with a very basic cheesecloth also helps.
Another easy tip that works is to use a paring knife to cut the cheese. The meat in the cheese will be more tender because the meat is already cooked. You could also try to cut smaller pieces of the meat and use them for the meat you are cutting up. This will make the meat a little less tender, but it will definitely be more tender.
